Kirkendall, Judith M. "Hawaiian Ethnogastronomy: The Development of a Pidgin Cuisine," University of Hawaii, Manoa, August 1985.
This dissertation examines the changes in the food behavior of eight ethnic groups which have immigrated to the Hawaiian Islands within the past two hundred years, and compares the kinds of changes and the chronological records of these changes with similar developments in the history of Pidgin English in Hawaii. Sociolinguistic patterns are shown to have closely paralleled socioethnogastronomic changes.
